One of my most favorite actors of all time is Anthony Hopkins. If he's one of your favorites, then you already know the title of this dish came from the movie "Hearts in Atlantis."
A few people have said to me, "Oh, I don't like fish" or "I don't eat fish." I learned that usually, it's because fish wasn't part of their household diet growing up. But as I hope to show with this dish, the right preparation can make all the difference.
Over the years, I have offered this dish to a few reluctant guests. It's easy to make, and the reward is sublime: This dish has never failed to win over a reluctant fish-eater. Even children who "didn't eat fish" fought for seconds and then proceeded to enjoy it. Just like the kiss in the movie Hearts in Atlantis, this fish will be the fish "by which all others in your life will be judged...and found wanting." It will leave a long-lasting impression on your palate, and you'll surely want to make it again and again.
